Ben's journey was supposed to be different
Instead of finding the Sith Pathfinder on Mustafar, Ben Solo was supposed to travel to a swamp planet and find a creature called "The Oracle" there. In the course of development, the artists of the film created various interpretations of the nature.
These ranged from a head sticking out of the water to a Cthulhu-like monster growing out of the head of a giant baby. According to J.J. Abram's final version was leaked in January 2020

The monster was built
Building such a huge monster is not easy. According to the creative supervisor, it was about the biggest silicone cast they'd ever made
For comparison: Jabba the Hutt from The Return of the Jedi weighed "only" 2,000 pounds (one ton) and was operated by three workers.
