Now, Reddit user DanteDameron has posted an image on the forums that seems to solve this question: the engraving would be of a Toxtricity Gigamax, which has been recently released in the game through the Dinamax Raids. The truth is that it does seem to fit in some aspects, such as oval eyes and especially the pointed tail.

We must remember that in the game we are told about an event in the form of a catastrophic storm that is represented in that engraving. In this way, Toxtricity would be the cause of all this, something that would fit with the statues of this Pokémon that we can see in Pueblo Amura:
